Halabos na alimasag is a simple and classic Filipino way of cooking mud crabs.  This dish involves steaming the crabs in their own juices and adding minimal seasoning, which allows the natural sweetness and flavor of the crab meat to shine through. Here’s a recipe for it:

Ingredients:

  • 2-3 lbs of Alimasag
  • 1/4 cup water
  • Salt and pepper to taste
  • 2-3 pieces of green chili (siling haba)
  • 1-2 pieces of calamansi or lemon (optional)

Instructions:

  1. Clean and prepare the crab by removing the top shell, gills, and innards. Rinse the crab with water and set aside.
  2. In a large pan or wok, pour in the water and bring it to a boil.
  3. Add the crab to the pan, arranging them in a single layer.
  4. Season the crab with salt and pepper to taste.
  5. Add the green chili to the pan, spreading them around the crab.
  6. Cover the pan and let the crab cook for about 10-15 minutes, or until it turns bright orange and the juices are released.
  7. Turn off the heat and transfer the crab to a serving plate.
