Ingredients:
- 1 whole bangus (milkfish), scaled, cleaned and cut into serving pieces
- 1 cup water
- 1 cup vinegar
- 1/4 cup soy sauce
- 1 medium onion, sliced
- 2-3 cloves garlic, minced
- 1 thumb-sized piece of ginger, sliced
- 1 long green chili pepper (siling haba), sliced (optional)
- 1 tablespoon whole peppercorns
- 2-3 pieces dried bay leaves
- 1 tablespoon sugar
- Salt to taste
- 2 tablespoons cooking oil
Instructions:
- In a pot or a pan, sauté the garlic, onion and ginger in oil until the onion is translucent.
- Add the vinegar, soy sauce, water, whole peppercorns, bay leaves and sugar.
- Add the sliced green chili pepper (if using) and bring the mixture to a boil.
- Add the milkfish pieces to the pot and reduce the heat to a simmer.
- Cover and let it cook for 10 to 15 minutes or until the fish is cooked through and the sauce has thickened.
- Season with salt to taste.
- Serve hot with steamed rice.
This paksiw na bangus recipe is a simple and delicious way to prepare milkfish. The vinegar-based sauce gives the dish a tangy and savory flavor, while the green chili pepper (if using) adds a hint of spiciness. You can also add other vegetables like eggplant, okra or bitter gourd, depending on your preference. Enjoy!
