Dilis Kinilaw is a popular Filipino dish that features raw anchovies marinated in a mixture of vinegar, citrus juice, onions, and chili peppers. Here’s a recipe for Dilis Kinilaw:
Ingredients:
- 1/2 kg fresh dilis (anchovies), cleaned and deboned
- 1/2 cup vinegar
- 1/4 cup calamansi juice (or lemon juice)
- 1 onion, chopped
- 2 red chili peppers, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon ground black pepper
Instructions:
- In a bowl, mix together the vinegar, calamansi juice, onion, chili peppers, salt, sugar, and ground black pepper.
- Add the fish and mix well to ensure all the fish is covered in the marinade. Allow the mixture to marinate for at least 30 minutes in the fridge.
- Once the fish has marinated, it should appear opaque and “cooked” by the acid in the marinade.
- Serve the fish Kinilaw cold as a refreshing appetizer or side dish.
Enjoy your Dilis Kinilaw!
