Escabecheng Galunggong is a popular Filipino fish dish made with fried Galunggong  fish served with a sweet and tangy sauce made of vinegar, sugar, and vegetables. Here’s a recipe for Escabecheng Galunggong:

Ingredients:

  • 4-6 pieces of Galunggong, cleaned and scaled
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup vegetable oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1/2 cup vinegar
  • 1/2 cup water
  • 1/4 cup sugar
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1/4 cup green onions, chopped (for garnish)

Instructions:

  1. In a shallow dish, mix together the flour, salt, and black pepper.
  2. Dredge the fish in the flour mixture and shake off any excess.
  3. Heat the oil in a frying pan over medium heat. Fry the fish until golden brown and cooked through. Set aside.
  4. In another pan, sauté the onion, garlic, and red bell pepper until tender.
  5. Add the vinegar, water, sugar, and soy sauce to the pan with the vegetables. Simmer for a few minutes until the sauce thickens.
  6. Arrange the fried fish in a serving dish and pour the sauce over the top. Garnish with chopped green onions.
  7. Serve hot with steamed rice.
