Ingredients:

• 2 medium-sized fish
• 1/4 cup soy sauce
• 1/4 cup calamansi or lemon juice
• 3 cloves garlic, minced
• 1/4 teaspoon ground black pepper
• 1/4 cup water
• 2 tablespoons cooking oil

Instructions:

1. Clean the fish by removing scales, guts and gills. Rinse well and pat dry with paper towels.
2. In a bowl, combine the soy sauce, calamansi juice, garlic, black pepper and water to make the marinade.
3. Place the fish in the marinade, making sure that it is well coated on both sides. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
4. Preheat the grill to medium heat. Brush the grill grates with cooking oil to prevent sticking.
5. Remove the fish from the marinade and pat dry with paper towels.
6. Grill the fish for 6-7 minutes on each side or until cooked through and slightly charred. Brush the fish with some of the remaining marinade while cooking.
7. Once the fish is done, remove from the grill and serve hot with a side of steamed rice and vegetables.
