Here’s a simple and delicious recipe for Filipino-style Lapu-Lapu (Grouper):

Ingredients:

  • 1 medium-sized Lapu-Lapu (Grouper) or any firm white fish
  • 1/4 cup soy sauce
  • 1/4 cup calamansi or lemon juice
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 tomato, sliced
  • 1/4 teaspoon ground black pepper
  • 1/4 cup water
  • 2 tablespoons cooking oil

Instructions:

  1. Clean the Lapu-Lapu by removing scales, guts, and gills. Rinse well and pat dry with paper towels.
  2. In a bowl, combine the soy sauce, calamansi juice, garlic, black pepper, and water to make the marinade.
  3. Place the fish in the marinade, making sure that it is well coated on both sides. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
  4. Heat a pan over medium heat. Add the cooking oil and sauté the sliced onion until it becomes translucent.
  5. Add the sliced tomato and continue to sauté until it becomes soft.
  6. Remove the fish from the marinade and place it on top of the sautéed onion and tomato.
  7. Pour the remaining marinade over the fish and cover the pan with a lid. Let it simmer for 10-12 minutes or until the fish is cooked through.
  8. Once the fish is done, transfer it to a serving dish and garnish with some sliced calamansi or lemon.
  9. Serve hot with a side of steamed rice and vegetables.
