Ingredients:
- 1 medium-sized Lapu-Lapu (Grouper) or any firm white fish
- 1/4 cup soy sauce
- 1/4 cup calamansi or lemon juice
- 3 cloves garlic, minced
- 1 onion, sliced
- 1 tomato, sliced
- 1/4 teaspoon ground black pepper
- 1/4 cup water
- 2 tablespoons cooking oil
Instructions:
- Clean the Lapu-Lapu by removing scales, guts, and gills. Rinse well and pat dry with paper towels.
- In a bowl, combine the soy sauce, calamansi juice, garlic, black pepper, and water to make the marinade.
- Place the fish in the marinade, making sure that it is well coated on both sides. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Heat a pan over medium heat. Add the cooking oil and sauté the sliced onion until it becomes translucent.
- Add the sliced tomato and continue to sauté until it becomes soft.
- Remove the fish from the marinade and place it on top of the sautéed onion and tomato.
- Pour the remaining marinade over the fish and cover the pan with a lid. Let it simmer for 10-12 minutes or until the fish is cooked through.
- Once the fish is done, transfer it to a serving dish and garnish with some sliced calamansi or lemon.
- Serve hot with a side of steamed rice and vegetables.
