Ingredients:
- 1 kilogram Matambaka, cleaned and cut into serving pieces
- 1 liter water
- 2 medium-sized tomatoes, quartered
- 1 onion, sliced
- 1 thumb-sized ginger, sliced
- 1/2 cup tamarind fruit or 2 tbsp tamarind powder
- 1 bundle kangkong (water spinach)
- 1 radish, sliced
- 2 green chili peppers (siling haba)
- 1 tablespoon fish sauce (patis)
- Salt to taste
Instructions:
- In a pot, bring the water to a boil. Add the tomatoes, onion, and ginger. Simmer for 5 minutes or until the tomatoes are soft.
- Add the fish and tamarind fruit or tamarind powder. Simmer for another 10 to 15 minutes or until the fish is cooked through.
- Add the sliced radish and green chili peppers. Simmer for 5 minutes or until the radish is tender.
- Add the fish sauce and salt to taste.
- Add the kangkong and let it cook for 1 minute.
- Turn off the heat and serve hot with steamed rice.
