One of the best dishes that feature Maya-maya is “Paksiw na Maya-maya,” a classic Filipino dish that is cooked in vinegar and spices. Here’s a recipe for this delicious dish:
Ingredients:
- 1 kilogram Maya-maya, cleaned and sliced into serving pieces
- 1 cup vinegar
- 1 cup water
- 1/2 cup soy sauce
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 2 green chili peppers (siling haba)
- 2 teaspoons whole peppercorns
- 1 tablespoon brown sugar
- Salt to taste
Instructions:
- In a pot, arrange the Maya-maya fish slices.
- Add the vinegar, water, soy sauce, onion, garlic, ginger, green chili peppers, whole peppercorns, and brown sugar. Mix well.
- Bring the mixture to a boil, then lower the heat to a simmer. Cover the pot and cook for 20 to 25 minutes or until the fish is cooked through.
- Add salt to taste. You can also adjust the amount of vinegar, soy sauce, and sugar according to your taste preference.
- Serve hot with steamed rice.
