Camto or Flank Steak is by far the most versatile cut, which one takes in the front of the rear quarter of the cow. Although mostly unrecognized, Flank steak is excellent when one cooks it correctly. Many chefs cut across the grain, allowing the meat to avoid its chewier texture, making it more tender. Flank steak is so versatile, and is used in various dishes. Flank steak is the main ingredient in the Filipino Beef Tapa, Filipino Steak and our personal favorite, Beef Pares.
