Ingredients:
- 2 medium-sized fish
- 1/4 cup soy sauce
- 1/4 cup calamansi or lemon juice
- 3 cloves garlic, minced
- 1/4 teaspoon ground black pepper
- 1/4 cup water
- 2 tablespoons cooking oil
Instructions:
- Clean the fish by removing scales, guts and gills. Rinse well and pat dry with paper towels.
- In a bowl, combine the soy sauce, calamansi juice, garlic, black pepper and water to make the marinade.
- Place the fish in the marinade, making sure that it is well coated on both sides. Marinate for at least 30 minutes or up to 2 hours in the refrigerator.
- Preheat the grill to medium heat. Brush the grill grates with cooking oil to prevent sticking.
- Remove the fish from the marinade and pat dry with paper towels.
- Grill the fish for 6-7 minutes on each side or until cooked through and slightly charred. Brush the fish with some of the remaining marinade while cooking.
