  • 1 kilogram Matambaka, cleaned and cut into serving pieces
  • 1 liter water
  • 2 medium-sized tomatoes, quartered
  • 1 onion, sliced
  • 1 thumb-sized ginger, sliced
  • 1/2 cup tamarind fruit or 2 tbsp tamarind powder
  • 1 bundle kangkong (water spinach)
  • 1 radish, sliced
  • 2 green chili peppers (siling haba)
  • 1 tablespoon fish sauce (patis)
  • Salt to taste


  1. In a pot, bring the water to a boil. Add the tomatoes, onion, and ginger. Simmer for 5 minutes or until the tomatoes are soft.
  2. Add the fish and tamarind fruit or tamarind powder. Simmer for another 10 to 15 minutes or until the fish is cooked through.
  3. Add the sliced radish and green chili peppers. Simmer for 5 minutes or until the radish is tender.
  4. Add the fish sauce and salt to taste.
  5. Add the kangkong and let it cook for 1 minute.
  6. Turn off the heat and serve hot with steamed rice.
