Ox Tripe or popularly known in our country as “tuwalya” is the edible lining located at the cow’s stomach. Ox Tripe is one of the main ingredients in Kare Kare, our all-time Filipino favorite stew made of pork or beef, vegetables in peanut sauce and served with delicious shrimp paste (bagoong). 

What is the difference between tripe and honeycomb tripe?

Tripe comes from the stomach lining of beef. The stomach of a cow has four chambers. Tripe can be from either of the first three chambers. Honeycomb tripe comes from the second stomach chamber.
How to Properly Clean Cow’s Tripe
  • Place the tripe in a large pot of salted water — make sure it’s completely submerged.
  • Slowly bring to a boil and allow it to boil for 10-15 minutes. Remove the tripe from the water and place it on a cutting board.
  • With a sharp knife, scrape gently and remove any bits that aren’t white and don’t look appealing.
  • Give the tripe one final rinse and double-check to make sure there’s nothing unsavory clinging to the many pockets, folds, nooks, and crannies, and you’re good to go.
