The Beef Shank is located at the cow’s forearm in front of the brisket. It is one of the toughest cuts. Some of the most famous dishes that use the shank are Osso Bucco which require braising to make the meat more tender and the local favorite comfort food Bulalo which requires simmering not just the meat but also the bones, the ligaments, and the tendons attached to these pieces that bring out the rich flavor of the shank.
Beef Bulalo which uses the beef shank as the main ingredient is different from Beef Nilaga which uses beef chunks.
